Our Commis de Rang are the gems of our hotel! Entrusted with providing the best possible service at the highest standards in which will reflect Alain Ducasse at The Dorchester’s 3-Michelin stars.

Though skillfully trained, they never lose sight of their ultimate reasonability, to create lifelong memories for our guests.

Essential Functions & Physical Requirements

  • A day in the life of our Commis de Rang demands high levels of energy. They need consistency even though the days are never alike;
  • and creativity to tackle daily adventures. Listing all of the contributions that our Commis de Rang accomplish would be lengthy but the list below is essential to know.

  • Our Commis de Rang are responsible for expediting the dishes from the kitchen to the front of house designated area in a professional manner by paying attention to cleanliness of dishes, but also running the pass, making sure all the equipment is well polished and ready for service and preparing coffee and tea according to the guests preferences and up to standard.
  • Other duties will include completing the morning opening mise-en-place on time as well as closing duties, having extensive menu knowledge, and to ensure that the restaurant is ready to operate and welcome.

    All to ensure our guests receives nothing but the best experience.

  • Communication is what keeps our departments running perfectly. Our Commis de Rang must communicate with other departments and extended hotel team in order to ensure the alignment remains.
