To carry out all distillery operations necessary to enable raw materials to be processed into final product and co-products of the correct quality to meet customer requirements and achieve business goals.

Scope :

Reporting to : Distilleries Team Leader

Positions Reporting to The Job Holder - none

Key Dimensions responsible for all production operations at assigned distillery.

Key Responsibilities :

  • Order, receipt and store raw materials (Malt, Yeast, Fuel, Chemicals, Consumables)
  • Prepare Malted Barley for Mashing Process (Milling)
  • Process Grist to produce high quality wort for fermentation (Mashing)
  • Control and monitor fermentation process to produce fully fermented wash
  • Process fermented wash to produce new malt distillate to the required quality
  • Evaluate new malt distillate quality
  • Transfer new malt distillate to Spirit Receiver Warehouse Vats and carry out and record accurate spirit account
  • Prepare new spirit and dispatch by road tanker (reduction, sampling & tanker loading)
  • Complete documentation accurately and forward to appropriate person or place
  • Conduct an appropriate handover of operations at every shift change to ensure that continuous production is achieved
  • Key Capabilities :

  • Perform all operational tasks required to produce and dispatch high quality final product and co-product from raw materials to meet business requirement.
  • Perform fault finding analysis to optimise plant performance
  • Understand performance requirements and demonstrate an awareness of the linkage to Company Objectives
  • Take decisions based on a logical approach to fact gathering
  • Be aware of limits of own authority and involve appropriate personnel in decision making process at appropriate time
  • Demonstrate capability to develop new skills in operating Personal Computer and PLC based systems to control, monitor, maintain, communicate and report on production operations to the required standard.
  • Demonstrate good numeracy and literacy skills
  • Demonstrate ability to communicate effectively with others utilising various media
  • Demonstrate ability to develop new skills and train others
  • Understand and contribute to continuous improvement
  • Operate within Health & Safety legislation.
  • Operate within the Distillery Management Control System, FEMAS Manual, HMRC statutory requirements and SEPA consent discharge conditions.
  • Perform basic mechanical and electrical routine maintenance tasks
  • Proactive in learning new technologies and associated plants such as evaporators and bio plants
  • Carry out routine organoleptic evaluation of raw materials and new malt distillate and take corrective action when appropriate
  • Carry out routine chemical / process analytical evaluation of raw materials and finished product and co-product and take corrective action when appropriate
  • Plan and organise workload
  • Understand and influence effective energy utilisation and costs
  • Candidates must be aware that the distilleries operate a rotating shift pattern up to 7 days a week, 24 hours a day and must have a valid UK driving licence.
