To manage catering services ensuring the service provided is in line with legislative, contractual and company standards.
Provide advice, coaching and support to staff in order to maximise the efficient and effective provision of catering services.
Manage the kitchens and food servery areas ensuring the provision of meals complies with relevant company and contractual standards & policies and legislative requirements.
Monitor all catering activities suggesting improvements as necessary to ensure client objectives and detainees needs are met and complaints are minimised.
Plan and cost menus, ensuring appropriate supplies are ordered and stored correctly and standard recipes are adhered to , to meet the requirements of the contract and detainees.
Plan manpower requirements and deploy staff effectively and appropriately to ensure the smooth running of catering services.
Ensure all catering, health, safety & environmental and emergency procedures are adhered to in line with company policy and legislation.
Manage the shop and vending machines ensuring they are appropriately stocked and operate smoothly.
Coach staff and detainees and support their development, recruiting as necessary, to maximise their performance, motivation and contribution.
