Dysphagia Production & Development Chef

We have an unique opportunity for a Chef de Partie to join our team at one of our healthcare sites in York as a Dysphagia Production & Development Chef.

We are a contract catering company that provides a fresh food service, serving nutritionally calculated seasonal menus to 60 patients a day lunch & dinner and breakfast on a Saturday.

We also provide a dysphagia menu to some patients which we are required to be IDDSI compatible.

We provide a 3 week menu cycle specialised and nutritionally calculated using software to patient’s needs, we insure all our food offer is consistent through recipes and training is provided throughout the brigade to insure these are followed.

The successful candidate will demonstrate excellent craft skills, be flexible in their approach and have the ability to work on their own initiative.

They will also have experience working with Dysphagia / texture modified foods.

All textures that form the IDDSI framework will be required in production so knowledge of this will be required. Menu and product development will be part of the role producing and testing new recipes.

You will need to show a care and commitment to the food production and show understanding of patients’ needs & nutrition in your work.

Key responsibilities include, but is not limited to :

  • Support the head chef in managing and training the team of 5 on dysphagia food (holiday cover is provided)
  • Produce & develop an al a carte dysphagia menu for breakfast, lunch & dinner.
  • Supply Dysphagia patients a creative & flavourful food offer.
  • Have high standards of food hygiene and follow the rules of health and safety
  • Ensuring that all food waste during preparation and service is kept to a minimum
  • Ensuring that all food being served is consistent and follows the Wilson Vale brand standards, whilst providing for patients requirements & needs.
  • Knowledge with using and calculating nutritional information, we use software called Nutricalc but training will be provided with this.
  • Writing & development of recipes for the team to use.
  • Understanding in the IDDSI guidelines.
