Position Overview

  • The ideal Sous Chef will take pride working in the Banqueting Kitchen, creating bespoke food for events such as a grand dinner, or less formal receptions
  • You will be crucial in creating delectable dishes range from informal dining on breakfast, lunch and dinner to private exquisite dining
  • Together with the Executive Sous Chef or in absence, you will supervise all cooking personnel in your section. You will have the opportunity to participate in menu planning as well as being responsible for maintaining budgeted food and recipe costs
  • As a Sous Chef, you must be self-motivated and patient to train and develop other kitchen team members
  • Essential Functions & Physical Requirements

  • Previous experience in a luxury, fast paced hotel or restaurant environment is essential to be considered for this role
  • We are looking for passionate and experienced chefs to join the team and help train and lead the kitchen brigade during service
  • Qualifications and Desirables

  • Extensive experience as a Chef De Cuisine or Sous Chef or Equivalent work experience in a 5 star establishment
  • In depth knowledge of 5 star kitchen processes and operations
  • Strong understanding & application of French; Asian, British & International cuisine
  • Excellent knowledge of French Kitchen terms
  • Proven experience & deep understanding of the application of core kitchen process e.g.
  • Menus development, installation and training processOrdering systems and understanding yield processesEquipment cleaning, respect for high cost pieces and maintenance
