Our client is looking for an experienced Head Chef to run the kitchen.

The establishment has a 250 cover restaurant serving East Asian cuisine, using mainly all fresh produce.

  • You will take full responsibility for the kitchen and managing a team of 10.
  • You will be working 48 hours over 5 days.
  • You will be able to manage stock to deliver menu availability.
  • It is imperative that you ensure excellent Food Hygiene and health and safety standards throughout the kitchen at all times.
  • Ensuring all staff are up to date with health and hygiene, aware of allergens and up to date with HACCP and equipment procurement & maintenance.
  • To ensure that all Health and Safety legislation and guidelines are implemented, adhered to and reviewed regularly, in respect of kitchen production, machinery, equipment and hygiene.
  • To ensure all areas are clean and tidy after service.
  • Proven track record working in a role of at least equivalent status.
  • Using your knowledge and experience of professional cooking to lead a team of staff and efficiently run the department maintaining the highest standards of hygiene.
  • Ability to prepare from scratch, and full knowledge of specialist cuisine. This may have been gained through qualifications in professional cookery or working in similar live cooking restaurant environment.
  • To be able to demonstrate cookery techniques and cook in front of customers.
  • Be experienced and practised in East Asian cuisine and wok cookery.
  • Be versatile to oversee all other sections within the BOH and train on other station chef departments.
  • Have full knowledge of health and hygiene.
  • Supervise and train junior staff to prepare food.
  • Order supplies from wholesalers and take responsibility for the budget within the department.
  • Flair, initiative and innovation for new dishes.
