Job Overview

Assist the Restaurant Manager in the management of all aspects and functions of the Restaurant operation throughout the hotel in accordance with the brand standards.

Manage all aspects of the Restaurant operation to ensure quality service and standards. Ensure compliance with all relevant governmental regulations and certifications.

Duties and Responsibilities

  • Manage the overall Restaurant budget throughout the year to meet business requirements within financial limits.
  • Implement and control effective purchasing and ordering activities to optimise service and profit performance.
  • Monitor restaurant cost on a daily basis and work closely with the Director of Food and Beverage
  • Oversee the monthly inventory for all the wines and beverages conducted in collaboration with the finance department.
  • Conduct weekly inventory and cross check of beverage inventory with Micros sales.
  • Direct day-to-day staffing requirements, plan and assign work, and establish performance and development goals for team members.
  • Provide mentoring, coaching and regular feedback to improve team member performance and help manage conflict.

  • Analyse guest insights to identify and meet customer expectations
  • Manage local beverage marketing programmes for the hotel; participate in and maintain system-wide beverage marketing programmes and promotions.
  • Skills & Experience

  • Previous hotel experience is advantageous
  • An absolute commitment to delivering high levels of customer service
  • Ability to remain calm whilst under pressure
  • Flexible and versatile in responding to guest requests and situations
